Who knew it was possible to be so passionate about cheese? The enthusiasm of the owner/operator of Heber Valley Artisan Cheese was contagious :) He gave us a tour of their facilities, explained how to “cheddar a cheese,” and showed us “the cave” (cold room to age cheese). Then, we got to taste test about 30 of his cheeses and give our ratings. Delicious!
